BABE Wine and Pepper has teamed up to inspire you to create your own fun menu at home. Thursday 14. January 2021 is the new year, and you know what that means, the big game is coming up. The holidays will be a little different this year, but that doesn’t mean you can’t enjoy all the food you love during the big game (or the commercials, if that’s more your speed). That’s why BABE Wine and your favorite Thai mom and cookbook author, Pepper Teigen, have teamed up to prove that sparkling wine by the glass goes with everything while you prepare a Big Game menu. From nachos and cheese fries to pigs in blankets and buffalo chicken sauce, BABE is the perfect addition to any occasion.

As any foodie knows, planning is a MUST when it comes to eating big game. This year Mama Teigen offers us an original recipe of crispy chicken wings paired with BABE Red, exclusively from her highly anticipated Thai pepper cookbook: Family recipes from all the Thai mothers. Crispy chicken wings served for 4 to 6 people:

3 pounds chicken wings, dry vegetable oil, for frying.

¼ cup plus 3 tablespoons fish sauce ¾ cup all-purpose flour

½ tsp garlic powder 2 tbsp cornflour or tapioca flour

½ tablespoon ground white pepper 2 teaspoons baking powder

½ teaspoon kosher salted Thai sweet chili sauce or spicy garlic lime fish.

  • Place the chicken wings in a large bowl. Add the fish sauce, garlic powder, white pepper and salt and stir. Set aside 15 minutes (or chill 30 minutes).
  • Meanwhile, fill a wok, large pot or deep fryer with at least 5 inches of oil, making sure to leave a few inches of space around the edge. Heat the oil over medium heat to 370 F (use a thermometer to fry or test the oil by placing a small piece of bread or a grain of rice on it; if it immediately sizzles, but doesn’t burn, you’re done). Place a grid in a drawer or place a paper plate and keep it nearby.
  • While the oil is heating, in a small bowl whisk together the flour, cornstarch and baking powder. Sprinkle the mixture over the wings and turn until a dough forms, making sure all the wings are evenly coated.
  • When the oil is hot, add 4 or 5 wings to the pan and fry until golden brown, 3 to 4 minutes. The color of the crust will tell you when they are ready. So keep an eye on the wings and adjust the heat as needed while roasting.
  • Let the wings drain on a rack or paper towels and bake the next batch. Serve warm with a sweet chili sauce or, if you prefer it hot, with a spicy fish sauce.
