Napa’s famous winery introduces a new bubbly and bite-sized menu, as well as an exclusive outdoor sabayeur experience.

March 2021. – In conjunction with the expiration of the COWID-19 restrictions, Domaine Carneros, the highly regarded sparkling wine house from the Carneros region of California, is pleased to introduce two new offerings, both of which will be available starting January 1. The month of April will be available for visitors.

The second edition of Bubbles & Bites, specially designed to showcase the flavors of cuisines from around the world, now takes guests to Mexico. The new menu, which will be available on 1. The April 2021 launch highlights the depth and vibrancy of fine Mexican cuisine, inspired by history, family and the freshest local ingredients. Led by one of the most experienced wine educators, a seasonal menu of four savory bites and one sweet will be offered, each specially paired with four sparkling wines from Domaine Carneros – Ultra Brut, Estate Brut Cuvee, Brut Rosé and Vermeil Demi-Sec. In addition, the Carneros Estate offers 1. April a new unforgettable and sublime tasting experience: Art Sabraja. This experience, offered Monday through Thursday for groups of two to six people, teaches the history, traditions and technique of this dramatic ritual that dates back to Napoleonic times. This experience includes four tastings of Domaine Carneros sparkling wines paired with a selection of local artisanal products from Journeyman Meats, Cowgirl Creamery and Nicoulai Caviar King and includes a sword demonstration. Domaine Carneros was established in 1987 and reflects the signature of its founder, Champagne Taittinger, by creating a vision of sparkling wine inspired by the terroir and preserving the quality principles of the traditional production method. Located entirely in the Carneros AVA, between Napa and Sonoma, the six vineyards total approximately 400 acres, of which 125 acres are planted with Chardonnay and 225 acres with Pinot Noir, with the remaining acres still under development. The winery specializes in the production of ultra-premium Carneros sparkling wines, primarily Pinot Noirs grown on the estate.

The Domaine Carneros castle has become a landmark and a symbol of the region. The architecture and interior decoration are inspired by the 18th century Château de la Marquetterie. Inspired by the 19th century, the historic residence of the Taittinger family in Champagne. In March of this year, the San Francisco Chronicle named Carneros Winery one of the 25 best wineries in the Bay Area to visit.

The winery also attaches great importance to environmental protection and is a leader in various environmental measures. The largest solar panel in the world is on the roof of the Pinot Noir winery adjacent to the chateau, and this year a state-of-the-art microgrid will be installed that will allow the winery to meet 85% of its energy needs. The two most recent awards are the California Green Medal for Carneros Estate’s demonstration of smart business through efficiency, cost savings and innovation through sustainable practices, and the 2020 Napa Climate Champion in the business category.
